Eat the Rainbow: Fruit Kabobs

First, my sincerest apologies for not getting this post up this weekend, but it was a very busy one full of Zeke's Art and Music Show for preschool follow by almost 30 hours of work in the last three days. Anyway, here it is...part two in my Run the Rainbow, Eat the Rainbow series. You can read part one where my boys reviewed the New Balance 890v3 Rainbow shoes here.

Today I'm sharing ChopChop Magazine's healthy snack idea using all the colors of the rainbow. I had signed up to bring a fruit snack to the Art and Music Show on Saturday, so this recipe was perfect. It also seemed to be perfect timing as Zeke has been learning all about rainbows in school the past couple of weeks! 

Making sure your diet includes all the essential vitamins and minerals is as easy as creating a rainbow.

Here's what you will benefit from with a few examples of food in each color:

RED - Vitamins A and C, manganese, lycopene, and fiber. Examples: red bell peppers, cranberries, rhubarb, beets, tomatoes, and strawberries.

ORANGE - Vitamins A, C, and B6, potassium, and fiber. Examples: sweet potatoes, carrots, cantaloupe, oranges, and peaches.

YELLOW - Vitamin A, potassium, manganese, magnesium, and fiber. Examples: bananas, pineapple, and summer squash.

GREEN - Vitamins A, C, B6, and K, folic acid, niacin, lutein, potassium, magnesium, calcium, and manganese. Examples: spinach, broccoli, asparagus, green grapes, and avocado

BLUE - Vitamin C, fiber, and antioxidants. Example: blueberries

PURPLE - Vitamin C, fiber, and antioxidants. Example: eggplant, grapes, plums, and purple cabbage.

It really could not be easier, just place the fruit on the skewer in the order of the rainbow and you've got a quick, fun and delicious snack packed full of vitamins and minerals.
